It is an effective weighting agent for adjusting the density of citrus oils in beverages. Ester Gum 8BG-HS is a more readily soluble form of ester gum best suited as a weighting agent for difficult oils. Concentrations of up to 100 ppm in the finished beverage are permitted. Ester Gum 8BG is highly effective in imparting stability to a broad spectrum of cloudy, citrus-flavored beverages.
