Sodium copper chlorophyllin is also known as chlorophyll copper sodium salt. It is a metal porphyrin with very high stability. It is dark green powder, tinting strength, and bright color. In solution, it has a blue-green shade which is clear and transparent. It precipitates in presence of calcium ions. At pH below 6, sodium copper chlorophyllin precipitate in solution due to the molecules aggregation of planar spatial structure under acidic condition. Sodium copper chlorophyllin is extracted from spinach or silk worm. The color is extracted with acetone or ethanol solvent with addition of copper sulfate to solvent. The magnesium porphyrin ring atoms in chlorophyll are replaced with copper atoms in the chlorophyll structure.
