Paprika red is named from red pepper, is a tetrapentin red pigment extracted from ripe red pepper, which is a carotenoid pigment. Red pepper high polar carotenoids are devided into pamelon and pepper jurulin accounting 50-60% of total carotenoids and the other small polar are yellow and the main component is carotene and corn yellow. Red pepper color is not only bright, high, strong color with good color effect, it is widely used in fish and meat products, pastries, salad, canned food, beverages, etc. It can affectively exent simulation food shelflife period and has high nutrition and health benefits. Recent, research showed that paprika red has anti-cance, anti-radiation and other functions.
