Bentonite is a fine montmorillonite clay consisting of aluminum silicate anions (Al2O3.SiO2)(H2O)n neutralised by cations such as sodium, calcium, potassium and magnesium. Bentonite's microscopic structure consists of many plates that position in such a way as to swell considerably when absorbing water.
Bentonite has a negative electrical charge and is used to remove protein (giving "heat stability").
